It can be hard to find easy, quick, and healthy snacks for everyone in the family. These peanut butter oat snack bites are too good not to share!
My family recently made a big province to province move. During the last couple weeks at our old place, I desperately tried to use up all the food in my fridge and pantry so nothing would go to waste. A quick google or pinterest search for "Peanut Butter and Oats" brought up all sorts of peanut butter energy ball recipes. Here's my version!
The first time I made them my daughter ate so many she got a tummy ache. That's when you know they're delicious! Once we moved into our new home and bought groceries I quickly made them again! My daughter likes to eat them with a cup of milk for an energizing afternoon snack. I prefer to eat mine for breakfast. My husband? Well, he eats one every time he opens the fridge.
This is the easiest recipe ever! Healthy, kid friendly, and no baking required. Will you be making these for yourself or your family this weekend?
Peanut Butter Oat Snack Bites Recipe
2/3 Cup Natural Peanut Butter
3/4 Cup Quick Oats
1/4 Cup Ground Flaxseed, Bran Flakes, or whatever other healthy fibre filled thing you have on hand!
1/2 Cup Dark Chocolate Chunks
1-2 Tbsp Honey (add 2 Tbsp if you like them really sweet, I prefer it to be more subtle and go with 1 Tbsp)
Mix everything altogether in a bowl, let the "dough" chill in the fridge for 20 minutes or so, then form into snack sized balls. That's all there is to it! Makes about 12-15 snack bites, depending on how small or large you want them to be. Since I use natural peanut butter in my recipe, they store best in the fridge.
